This week, the cooking group travelled to Egypt through their taste buds. They cooked the famous Egyptian Molokhia.
Molokhia is a type of leafy plant called Corchorus, Jews mallow, Jute mallow or Nalta. It is said that Molokhia started from Egypt and then spread to the rest of the Middle East, North Africa and East Mediterranean regions. It can be found in different forms from fresh leaves, dried or frozen variety.
Hence making its uses very versatile as well in soups, curries, salads and many other uses.
We had a fun time cooking and talking about some Egyptian superstition. Did you know that when cooking the Molokhia, you chant ‘Hadra Hadra Hadra’ three times before you pour it all in the pot. This means ‘Green green green’ and its believed that it keeps the soup green!

Susy: I cook this all the time but I have never had to do it for a large number of people. always remember that you need to keep the Molokhia low and slow once you add it to the broth.
Marya: enjoyed the class. Its so amazing how different cultures cook same things in different ways. The Molokhia is quite filling.
Savina: an interesting session. Enjoyed it as always. The conversation was very interesting too
Susan: So many cultural beliefs and a lot of things to learn about the world. The food was very different for me
Rodney: I have heard of this meal before and very interesting to finally make it with the group. I enjoyed the session.
